Free photograph of a garden spinach plant that is starting to bolt of go to seed. Spinach is a cool weather plant. When the weather gets much above 70 degrees Fahrenheit, spinach will start to bolt. Once it bolts, the plant sends up tall stalks and puts all of its energy into flowers and seeds, so it pretty much ends its usefulness for producing good edible leaves.
